Wine & Dine with Our Chocolate Cabernet Ice Cream

Chocolate Cabernet combines rich chocolate ice cream with bold Cabernet Sauvignon for an elegant, full-bodied flavor.

Dark chocolate and red wine complement each other with deep cocoa, dark fruit and warm tannin notes.

This Naughty flavor is available only to guests 21 and older, where permitted by state law.

The combination of chocolate and Cabernet in our Chocolate Cabernet ice cream creates a sophisticated and unique flavor profile.

Chocolate Cabernet Ice Cream

Our Chocolate Cabernet ice cream is Clementine’s at its most decadent: a luscious, rich chocolate ice cream infused with a big, bold Cabernet Sauvignon. The deep cocoa notes bring all the velvet and intensity of a classic chocolate scoop, while the wine adds a dark fruit finish that makes the flavor feel elegant, layered, and grown-up. It is smooth, dramatic, and full-bodied, with just enough Cabernet character to turn every bite into something a little more luxurious.

Our Process

Chocolate can be incorporated into ice cream or gelato by melting it and mixing it into the base. Our recipe starts with our proprietary sweet cream milk base and a mixture of creamy, melted chocolate and cocoa powder. While stirring constantly, we pour a bottle of red wine and make sure the base is thick and ready to be frozen in the ice cream machine.

Dark Chocolate and Red Wine

Dark chocolate and red wine are a natural pairing because both add depth, complexity, and a little drama. The richness of chocolate softens the wine's boldness, while the wine adds notes of dark fruit, tannin, and warmth, making the chocolate feel even more layered. Together, they create a flavor experience that is smooth, intense, and deeply satisfying.

For the best balance, high-quality dark chocolate is key. Chocolate in the 55% to 70% cacao range has enough intensity to stand up to Cabernet Sauvignon while still offering the creamy, bittersweet richness people love in a chocolate dessert. The result is a wine-infused ice cream that feels luxurious and unique, perfect for adult gatherings, special occasions, or anyone looking for a chocolate scoop with a bold point of view.

Cabernet Sauvignon is a popular choice for wine-infused desserts.

Cabernet Sauvignon is an especially beautiful choice for wine-infused desserts because of its big, bold character. Its dark berry notes and full-bodied finish pair naturally with chocolate, enhancing the cocoa's richness without fading into the background. In ice cream, Cabernet Sauvignon gives chocolate a more sophisticated edge, turning a familiar flavor into something more grown-up, elegant, and memorable.

Serving Tips

Naughty ice cream melts quite quickly. It's because alcohol isn't supposed to freeze! Our trade secret process for infusing alcohol into ice cream allows us to impart the notes of alcohol, in this case wine, into our ice cream flavors, but we do have a few tips to ensure the best-tasting experience with a Naughty flavor.

  • Put your serving bowls in the freezer for 10-20 minutes before scooping the ice cream. A cold bowl will keep the scoops colder longer, especially in the summer months.

  • If you're in the mood for an extra chocolatey dessert, sprinkle a handful of chocolate chips or chopped chocolate on top of your ice cream.

  • Store your ice cream pints in the deepest part of your freezer, where the temperature is coldest. Frequent, rapid temperature fluctuations at the storage points on the freezer door will degrade the quality of the ice cream over time.

Naughty Ice Cream

Grab a pint of the fabulous Chocolate Cabernet for your next friends' evening, or a fun pick-me-up to keep in the freezer for an extra-special night treat.

Our Naughty ice cream flavors are only available to guests 21 years of age or older, and may not be available at every parlor, depending on state liquor laws.
