This Madagascar Vanilla Ice Cream Has a Wild Side!

It's why we submit—and continually place—in the North American Ice Cream Association's Ice Cream Clinic. We want to make sure our signature vanilla flavor, Madagascar Vanilla, remains the gold standard.

There are over 150 species of vanilla beans worldwide, but we only use vanilla beans from Madagascar.

High vanillin content

Vanillin is a chemical compound found in vanilla extract. Vanillin is the organic compound that gives vanilla its distinct smell and taste. 

Madagascar vanilla beans have the highest vanillin concentration of any vanilla beans in the world. 

Flavor Notes

Madagascar vanilla beans are prized for their rich, buttery, creamy taste with notes of chocolate and dried fruit.

The high vanillin content and unique flavor profile of vanilla bean seed from Madagascar are the reasons our Madagascar vanilla ice cream is so cherished.

Tahitian vanilla beans

Still popular and delicious, Tahitian vanilla beans have a much more subtle flavor. These vanilla beans have a lower vanillin content than Madagascar vanilla beans and are known for delicate floral and fruity notes that pair well with light, fragrant-forward desserts.

The history of vanilla ice cream

The earliest written ice cream recipe, dating back to 1665, featured orange flower water, mace, and ambergris, showcasing the unique and exotic flavors popular in early European desserts. 

It wasn't until the 1760s that vanilla appeared in ice cream recipes, reserved for European aristocrats who prized its rare and exotic flavor. Thomas Jefferson later introduced this luxurious treat to the United States, serving it at the President's House in Washington. 

In 1841, Edmund Albius revolutionized the vanilla industry by proving the feasibility of hand-pollinating vanilla bean plants, making the flavor more accessible and beloved worldwide.

This version uses the same Madagascar vanilla beans you know and love, but instead of a milk-based ice cream, we use a mixture of coconut milk and cream.
